Ingredients: 1 can 13.5 oz coconut milk. 1/2 cup sugar. 1/2 cup cornstarch. 1 cup water. 1 cup shredded coconut. 1 cup graham cracker crumbs. 2 cups whipped cream. Fresh tropical fruits for garnish e.g., pineapple, mango, kiwi.
Instructions: Put sugar, cornstarch, and coconut milk in a saucepan and mix them together. Mix with a whisk until it's smooth. As you keep whisking over medium-low heat, add the water to the saucepan. The mixture will get thicker and then boil. Turn down the heat and add the coconut shreds. Cook for another two to three minutes, or until everything is well mixed. Take the pudding off the heat and let it cool down to room temperature. Put haupia pudding, graham cracker crumbs, and whipped cream in serving glasses. Do the layers again. Add more shredded coconut to the top of the parfait and decorate with fresh tropical fruits. Put it in the fridge for at least two hours before you serve it. Have fun with the Coconut Haupia Parfait when you serve it cold.
