This delightful gluten-free tart combines the nutty flavor of almond flour and the rustic texture of polenta in a buttery crust. The sweet and tangy sherried plum compote adds a burst of flavor that complements the almond-polenta base perfectly. It's a dessert that's both elegant and comforting.
Ingredients: 1 cup almond flour. 1 cup fine polenta. 1/2 cup granulated sugar. 1/4 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1 large egg. 1 teaspoon vanilla extract. 2 cups ripe plums, pitted and sliced. 1/4 cup sherry wine. 2 tablespoons honey. 1 tablespoon lemon juice. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon cardamom. Cooking spray or butter for greasing.
Instructions: Preheat your oven to 350F 175C. In a food processor, combine almond flour, polenta, granulated sugar, and salt. Pulse until well combined. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs. In a separate bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the food processor and pulse until the dough comes together. Grease a tart pan with cooking spray or butter, then press the almond-polenta dough evenly into the bottom of the pan to create the tart crust. Bake the crust in the preheated oven for 15-20 minutes, or until it turns golden brown. Remove and let it cool completely. In a saucepan, combine the sliced plums, sherry wine, honey, lemon juice, cinnamon, nutmeg, and cardamom. Cook over medium heat, stirring occasionally, until the plums soften and the mixture thickens about 15-20 minutes. Remove the plum compote from heat and let it cool slightly. Once the tart crust has cooled, spread the plum compote evenly over it. Refrigerate the almond polenta tart for at least 1 hour before serving.
