The Food Lab's Ultra-Smashed Cheeseburgers are an irresistible delight. By smashing the patties thin on a hot skillet, you achieve an extra-crispy crust, while the combination of melty American cheese, tangy sauce, and classic burger toppings makes for an unforgettable taste experience.
Ingredients: 4 hamburger buns. 1 lb ground beef 80/20. Salt and pepper, to taste. 8 slices American cheese. 1/4 cup mayonnaise. 1/4 cup ketchup. 1/4 cup diced onions. 1/4 cup sliced pickles. 4 leaves iceberg lettuce.
Instructions: For at least 10 minutes, heat up a cast-iron skillet over high heat. Make 4 balls out of the ground beef that are all the same size. Add salt and pepper to each ball. Put a meat ball on the skillet and use a spatula to press it down hard right away to make a thin patty. For about one minute, or until the edges start to brown and the patty comes out of the pan easily, cook. Put a slice of cheese on top of the patty as soon as you flip it over. Keep cooking for 30 seconds more, until the cheese starts to melt. The patty should be put on a bun with the cheese side up. Do it again with the rest of the meat balls. Put the mayonnaise and ketchup in a small bowl and mix them together. Put some mayo-ketchup sauce on the top half of each bun. On the bottom half of each bun, put a patty. Put a leaf of lettuce, diced onions, and sliced pickles on top of each patty. Use the top half of the buns to close the burgers. Serve right away and enjoy!
