Roasted Baby Potatoes with Cipollini Onions.
Mixed Baby Potatoes (3 lbs.), Cipollini Onions (8-10), Fresh Chive (1 bunch), Olive Oil (Dash), Kosher Salt (Dash), Black Pepper (Dash), Balsamic Vinegar (1/4 cup).
Preheat oven to 350 degrees. Toss potatoes in olive oil and salt with ΓΒ½ of the chopped chives and onions. Bake for 20 minutes. Remove, sprinkle with balsamic vinegar and return to oven for another 20 minutes. When potatoes are soft it is done. Serve with remainder of fresh chives.
