Ingredients: 4 boneless, skinless chicken breasts. 2 large sweet potatoes, peeled and diced. 1 onion, chopped. 3 cloves garlic, minced. 1 cup chicken broth. 1/4 cup maple syrup. 1 tablespoon ground cinnamon. 1 teaspoon ground ginger. 1/2 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: Place chicken breasts in the bottom of the slow cooker. Add sweet potatoes, onion, and garlic on top of the chicken. In a small bowl, mix together chicken broth, maple syrup, cinnamon, ginger, salt, and pepper. Pour the mixture over the chicken and sweet potatoes. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and sweet potatoes are tender. Serve hot, garnished with fresh herbs if desired.
