I was just at Supanova Adelaide where Bonnie Wright had a Q&A session. Whilst most questions were about Bonnie herself, there were a few questions about Ginny.

When asked who Ginny would have ended up with, had Harry and Ginny not gotten together, Bonnie was heroically slow to respond, declaring that she felt that the two were always suited in her eyes, but if she had to pick, she felt that either Cedric Diggory, because everyone probably had a crush on Cedric Diggory, getting back together with Dean Thomas, or an unnamed character that she met outside the series.
In the aforementioned question, Bonnie stated that Ginny becomes a Quidditch Captain. I'm betting on the Gryffindor/Holyhead/England Trifecta.
I did ask Bonnie about her thoughts of the possibility of a Cho/Dudley marriage. She did say that she enjoyed that there were so many possibilities with fan theories, she wasn't sure about Cho/Dudley, which was to be expected.
