Ingredients: 1 1/2 cups graham cracker crumbs. 1/2 cup unsalted butter, melted. 1 cup canned pumpkin puree. 1/2 cup granulated sugar. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 2 cups cream cheese, softened. 1/2 cup brown sugar. 2 large eggs. 1 tsp vanilla extract. 1 cup semi-sweet chocolate chips.
Instructions: Preheat your oven to 325F 163C and line a 9x9-inch 23x23 cm baking pan with parchment paper, leaving an overhang for easy removal. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of the prepared pan to create the crust. In a separate bowl, mix together the pumpkin puree, granulated sugar, cinnamon, nutmeg, and cloves until well combined. Set aside. In another bowl, beat the cream cheese and brown sugar until smooth. Add the eggs and vanilla extract, and continue to beat until the mixture is creamy and free of lumps. Pour half of the cream cheese mixture over the graham cracker crust in the pan. Stir the semi-sweet chocolate chips into the remaining cream cheese mixture. Pour the pumpkin mixture over the first layer of cream cheese mixture in the pan. Dollop the chocolate-cream cheese mixture over the pumpkin layer. Use a knife to gently swirl the chocolate and pumpkin layers to create a marbled effect. Bake in the preheated oven for about 45-50 minutes, or until the cheesecake is set with only a slight jiggle in the center. Allow the cheesecake bars to cool in the pan at room temperature, then refrigerate for at least 2 hours, or until fully chilled and set.
