Reposted from @hungrygirlintoronto The Murshidabadi Chicken Korma is a sublime example of one of the oldest , yet relatively unknown Indian cuisines. This cuisine hailing from Murshidabad which was the Mughal seat of power ruling over undivided Bengal, Bihar and Orissa in the 18th century is one with a beautiful amalgamation of Bengal and Mughal influences. Yes, it is not well known like the Hyderabadi or Awadhi cuisine and after the partition it has become something only present in stories of pre partition Bengal ...but this cuisine is a magnificent example of how we imbibed the Persian influence into the local flavours of Bengal. . Kormas are synonymous with Mughlai cuisine with their rich base of cashews and other expensive ingredients and a souring agent like yoghurt. However in the Murshidabad Chicken Korma we use tamarind which is a rustic and more common ingredient in Bengal. Also interestingly , the other kormas in this cuisine are primarily vegetarian with ingredients like yam and potatoes.. . Whether it’s intricate recipes from the royal kitchens of the Maharajas, decadent secret dishes from the chefs of the Nizam or recipes which were closely guarded secrets of the humble hearth, there are some recipes which have faded into oblivion.
