She just wanted some Vegetables Soup.....so I made it for her. Here's the Easy recipe Vegetable and Sweet Potato Soup Onions, celery, carrots 2 each small diced Garlic 4 cloves chopped Sautee with oil and 1 tsp salt in a Dutch oven pot on medium heat for about 10 minutes occasion stir Add 1/4 tsp each dry basil, oregano, rosemary, black pepper Stir in 1 red pepper diced, 4 mushrooms diced, chopped Collard greens and Spinach a hand full each. Now by this time the bottom of the pot should be browning Now add broth. Chicken or vegetable preferably lo sodium, this should start to lift the 'brown bits' from the bottom of the pot. Cover for 7-10 minutes. then add small diced sweet potatoes cook for 15 minutes or until potatoes are cooked then add chopped broccoli. Reduce heat. Mix in small bowl flour and oil 2 tbp each(slurry). Increase heat and slowly stir in slurry in soup until desired thickness. When you make this you'll be glad, satiated and healthy.
