My food board includes non-vegetarian meals though. I’ve only been a vegetarian for a little over a month. I’m going to share two recipes today. I have no food. Or rather, I have plenty of "supporting" food, but no main food. Like I have tomato sauce and no pasta, sandwich fixings but no bread, spinach but no salad supplies.

So I had a stroke of genius and here's what I made for lunch! It was around 350 calories, 46 carbs, 11 fat, 13 protein, 4 fiber. 

Poor College Student Fried Rice 

1/4 cup frozen peas

1-2 Tbsp of frozen onion

1 cup cooked brown rice

1 egg

Salt/pepper/soy sauce to taste

I sautéed the peas and onion (if you can call it that) in some olive oil spray, then cracked an egg in there and fried it up and scrambled it. Tossed in the brown rice until it was hot, then seasoned with soy sauce!
