Ingredients: 1 1/2 cups chocolate cookie crumbs. 1/4 cup melted unsalted butter. 1/2 cup caramel sauce. 8 oz cream cheese, softened. 1/2 cup granulated sugar. 1 tsp vanilla extract. 1/4 cup cocoa powder. 2 large eggs. 1/2 cup heavy cream. 1/2 cup semisweet chocolate chips. Whipped cream for garnish. Chocolate shavings for garnish.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a baking sheet with eight small tartlet pans. Melted butter and chocolate cookie crumbs should be combined in a bowl. To make the crusts, press the mixture firmly into the bottoms of the tartlet pans. Fill each crust with a teaspoon of caramel sauce. Beat the softened cream cheese, vanilla extract, and granulated sugar together in a separate bowl until the mixture is smooth and creamy. Beat the eggs and cocoa powder into the cream cheese mixture until thoroughly blended. Cover the caramel in each tartlet crust with the cheesecake filling. The cheesecakes should be baked for 15 to 20 minutes, or until the edges are set and the center is still slightly jiggly. After taking them out of the oven, allow them to reach room temperature. The heavy cream should be heated in a small saucepan over low heat until it begins to simmer. Take off the heat and blend in the semisweet chocolate chips to form a ganache. After the cheesecake tartlets are cool, spoon the chocolate ganache over them. The tartlets should be chilled in the fridge for two hours or longer to solidify.
