Ingredients: 1 cup gluten-free all-purpose flour. 1/3 cup cocoa powder. 1/2 cup coconut sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup almond milk or any plant-based milk. 1/4 cup coconut oil melted. 1 flax egg 1 tbsp ground flaxseed + 2.5 tbsp water. 1 tsp vanilla extract. 1/2 tsp peppermint extract. 1/3 cup dairy-free chocolate chips. Crushed candy canes for topping. Vegan chocolate glaze optional, for dipping. Vegan white chocolate drizzle optional.
Instructions: Preheat your oven to 350F 175C and grease a donut pan with coconut oil. In a bowl, whisk together the gluten-free flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt. In another bowl, mix the almond milk, melted coconut oil, flax egg, vanilla extract, and peppermint extract. Combine the wet and dry ingredients, stirring until well combined. Fold in the dairy-free chocolate chips. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into a donut comes out clean.
