Some yummy dinners this week included tonight’s Cuban-inspired tostadas with mojo pulled jackfruit with black beans, rice and sweet plantain chips...and of course with extra mojo on top. SO DELICIOUS, if I do say so myself! I also made giant Cafe St. Jorge-inspired quinoa-farro apple salads mid-week with arugula, organic fuji apples, shaved fresh fennel, miso-glazed baked tofu and avocado tossed in a lemon and chive dressing that was fab. And to start the week, I made another “Buddha bowl” featuring roasted new potatoes, broccolini, asparagus spears and tofu over rice and smothered in Mom’s tahini dressing from Isa Chandra Moskowitz’s Super Fun Times Vegan Holiday Cookbook that’s the shizz! I could literally put that shit on everything! Yum! Not pictured was But it Doesn’t Taste Like Chicken’s very best chili ever, which I had frozen after the last batch. It freezes really well and was also excellent. I was just starving and forgot to get snaps of it yesterday. It’s definitely on my IG somewhere pretty recently if you want to see how good it looks. Tomorrow I’m trying a new recipe from Vegan Richa’s Everyday Kitchen cookbook so I’ll report back later!
