These Keto Buffalo Chicken Meatballs are packed with flavor and perfect for a low-carb appetizer or main dish. They're juicy, spicy, and incredibly delicious!
Ingredients: 1 lb ground chicken. 1/4 cup almond flour. 1/4 cup grated Parmesan cheese. 1 large egg. 1/4 cup buffalo sauce. 1/4 tsp garlic powder. 1/4 tsp onion powder. Salt and pepper to taste. 2 tbsp butter. 1/4 cup hot sauce for serving. 1/4 cup blue cheese dressing for serving.
Instructions: Preheat oven to 400F 200C and line a baking sheet with parchment paper. In a large bowl, combine ground chicken, almond flour, Parmesan cheese, egg, buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined. Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and browned. While the meatballs are baking, melt butter in a small saucepan over low heat. Stir in the hot sauce until well combined. Once the meatballs are done, toss them in the buffalo sauce mixture until coated. Serve the meatballs with additional hot sauce and blue cheese dressing for dipping, if desired.
