Sis tried out the recipe for Pork & Potato Croquettes or Korokke as the Japanese called it. She baked them instead of deep-fried as in the traditional Japanese style for a healthier snack. Beside the two main ingredients, there are also carrot π₯, onion π§ and mushroom πβπ«. Season to taste then portion it and form into patties. Give them an egg wash and coat in panko crumbs* before sending to bake in the oven. Drizzle with creamy mayonnaise and tangy tonkatsu sauce and eat while still warm.
* Since we are not deep-frying the croquettes, the bread crumbs doesnβt get a nice golden brown colour so we are taking an additional step by dry frying the crumbs first until the desired colour is achieved. In the first picture, you can see the difference, the four on the left did not have the bread crumbs fried versus the six golden croquettes on the right.

Since the Pork & Potato Croquettes keep well when frozen, you can pre-make them in advance and store them in the freezer compartment. Just pop them into the oven to reheat and you have got yourself a snack or meal depending on how many pieces you eat. Paired with a cup of non-sweetened hot Black Tea π΅ and that is my breakfast.
With a bread crumb topping, a creamy and cheese-filled mixture of spinach, artichoke hearts, and water chestnuts makes up this side dish casserole.
