El mecanismo de un botijo no es nada simple. Funciona igual que el cuerpo, que suda para refrigerarse. Para empezar, su geometría favorece que una gran superficie interior esté en contacto con el líquido. Debido a la capa aislante que posee la arcilla, los rayos de sol no calientan el agua y los poros del material dejan que el agua "sude" hacia el exterior. Además, al salir, las gotas se evaporar. Para ello toman energía del interior en forma de calor, y el líquido que bebemos se enfría muy rápidamente (tres litros de agua se enfrían 2º en 15 minutos, 8º en 60 y hasta 13º en tres horas). Eso sí, según se vacía su contenido, el aire que entra calienta una superficie de líquido cada vez mayor hasta que el botijo deja de enfriar. Entonces debe rellenarse.
