You can eat these vegan spinach tomato quesadillas for lunch or dinner. They taste great and are easy to make. They taste great and are good for you because they are full of fresh vegetables, vegan cheese, and protein-rich black beans.
Ingredients: 4 large tortillas. 2 cups baby spinach. 1 cup cherry tomatoes, halved. 1/2 cup vegan cheese, shredded. 1/2 cup black beans, drained and rinsed. 1/4 cup red onion, thinly sliced. 1/4 cup cilantro, chopped. 1 avocado, sliced. 1 lime, cut into wedges. Salt and pepper, to taste. 1 tablespoon olive oil, for cooking.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Purple kale, cherry tomatoes, black beans, and red onion should be added. It will take about 34 minutes of cooking until the spinach is soft and the tomatoes are wilted. Add pepper and salt to taste. Take it off the heat and set it aside. Add a tortilla to the pan and top it with vegan cheese. Add the spinach mix, cilantro, and avocado slices on top. Put another tortilla on top of it and lightly press it down. It should be cooked for two to three minutes on each side, or until it turns golden brown and crispy. Do it again with the rest of the tortillas and filling. Peel and cut the quesadillas into wedges. Serve with wedges of lime.
