The latest entrant to my comfort Asian food along with bibimbap, Donburi, Nasi Goreng and Nasi Lemak is not surprisingly another rice dish , this time Singapore's National Dish , Hainanese Chicken Rice. There is no other dish which celebrates the flavor of chicken so much. It comes in 4 parts, a broth, rice , chicken and dipping sauces. The key here is using the fresh fine quality country chicken , stewing it whole in a pot with spring onions , ginger, garlic , Pandan leaves and shaoxing rice wine or light soy. Chicken is never boiled but only slow cooked to retain all the moisture and the delicate flavor .The broth with all the fat is used to cook is used to cook rice which gives its oleaginous texture. The broth is also used to cook some cucumber which is served along with the rice,diced chicken, fresh cucumber slices and a punchy dipping sauce made with ginger, soy, and cilantro leaves.
