These BBQ stuffed potatoes are a great twist on regular baked potatoes. They are creamy, filling, and full of flavor. The smoky BBQ chicken goes well with the creamy sour cream, making the whole thing taste great.
Ingredients: 4 large russet potatoes. 1 cup shredded cooked chicken. 1/2 cup BBQ sauce. 1/2 cup shredded cheddar cheese. 1/2 cup sour cream. 2 tablespoons chopped green onions. Salt and pepper to taste.
Instructions: Turn on the oven and heat it up to 400F 200C. Scrub the potatoes well and then use a fork to make holes in them. For 45 to 60 minutes, or until soft, bake the potatoes in an oven that has already been heated. Put the shredded chicken in a bowl and coat it well with BBQ sauce. Make a hole in each baked potato and use a fork to fluff up the inside. Fill each potato with the BBQ chicken mixture that you've made. Shredded cheddar cheese should be put on top of each stuffed potato. Put the potatoes back in the oven and bake for another 10 minutes, or until the cheese melts and starts to bubble. Take them out of the oven and let them cool down for a while. Put sour cream, chopped green onions, salt, and pepper on top of each stuffed potato. Enjoy while hot!
