A tasty and comforting soup that tastes like white chicken lasagna and is easy to make in one pot.
Ingredients: 1 tbsp olive oil. 1 lb chicken breast, diced. 1 onion, chopped. 3 cloves garlic, minced. 4 cups chicken broth. 1 cup milk. 1 cup heavy cream. 1 can 14 oz diced tomatoes, drained. 1 tsp Italian seasoning. 1/2 tsp dried basil. 1/2 tsp dried oregano. Salt and pepper to taste. 8 oz lasagna noodles, broken into pieces. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. Fresh parsley for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add diced chicken breast and cook until browned. Add chopped onion and minced garlic, cook until onion is soft. Pour in chicken broth, milk, and heavy cream. Stir well. Add diced tomatoes, Italian seasoning, basil, oregano, salt, and pepper. Bring the soup to a simmer, then add broken lasagna noodles. Cook until noodles are tender, stirring occasionally, about 10-12 minutes. Stir in shredded mozzarella and grated Parmesan cheese until melted and creamy. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley. Enjoy!
