Goat cheese, cranberry, almond salad 🥗 In a bowl combine iceberg lettuce, rucola, diced red paprika, cucumber and avocado. For this salad I used left over basmati rice I cooked with coconut milk. In the frying pan sauté mushrooms, add rice, dried cranberries and mix of any nuts you have, topped with fresh or frozen dill. Meanwhile make dressing: in the blender combine hand full of fresh basil, lemon zest or apple cider vinegar and maple syrup. Toss salad with dressing and top with goat cheese, fried rice and lemon zest. Voilá 😋 . . . #salad #plantbased #veganlifestyle #basildressing
