Story

This recipe was one of the favoured go-to recipes from my Aunt’s handwritten recipe book. It brings back memories of going blackberry picking as a child with my siblings and coming home to the smells of this in the kitchen. We would all get cleaned up and then sit up to the table for a slice of this cake with custard (the bright yellow powdered Birdseye stuff from the tin, never home-made)! 30+ years later I am now doing the same with my children….

Ingredients

225g Plain Flour

110g butter (chilled and cubed)

110g Brown Sugar

225g Apples - can be eating or cooking (sliced very thinly)

2 Eggs

75g Sultanas

1tsp All Spice

1.5 tsp Baking Powder

Method

Heat the oven to 170. Mix the All Spice with the Baking Powder and Flour and rub in the butter so that it resembles breadcrumbs. Mix in the Sugar. Slice the apples finely and add these and the sultanas to the flour mix. Add the egg until it’s a big sticky mess.

Turn into an 8” round (lined) baking tin. Smooth over the top of the cake (the back of a wet spoon does this easily) and sprinkle with some granulated or demerara sugar.

Put into the oven and bake for 1.15 hours. Once cooked leave in tin for 10mins.
