Nutella Stuffed Cookies Recipe
- 11 Heaped Tspβs of Nutella
- 115g Unsalted Butter (Cold, Cut in cubes) - 190g Brown Sugar - 1 Tsp Vanilla Extract - 1 Egg (Cold)
- 245g Plain Flour - 1 Tbsp Cornflour - 1/2 Tsp Baking Soda - 1/4 Tsp Salt - 200g Milk Chocolate Chips
- Spoon 11 heaped teaspoons of Nutella onto a lined baking tray and freeze for 1 hour until frozen solid.
- Preheat the oven to 160 degrees Celsius (Fan) and line 2 to 3 baking trays with parchment paper.
- In a large mixing bowl, beat together the cold butter and sugar until combined.
- Add the vanilla and egg then beat again until just combined.
- Fold in the flour, cornflour, baking soda and salt until just combined (donβt over mix).
- Fold in the chocolate chips until evenly combined.
- Spoon a medium sized ball of cookie dough into your hand and flatten slightly. Place the Nutella ball in the centre of the cookie and mold the cookie dough around the Nutella to fully cover it (If the Nutella is not fully covered just grab some extra cookie dough until you fully seal the Nutella in).
- Place the cookie balls on the baking tray, evenly spaced in case of spreading.
- Bake for 15 minutes, doing one tray at a time and placed on the middle shelf in your oven.
- Allow to cool slightly but not too long as you want the Nutella to still be warm.
