Weeklong Happy 39 Birthday Baked Macaroni with Grilled Eggplant 🍆🍅🧅🧄🍄🥓🍝❤🧡💛💚💙💜 Since supplies are hard to get by and my time is stretched for having working weekends, I will stretch my birthday menu throughout this week too. This morning, I bought some eggplants from the roving Vegetable Vendor on pedicab. I grilled the eggplants over our stovetop, then set it aside while we had lunch. This afternoon, I prepared the Baked Mac components: cooked the Macaroni al dente, then the Tomato Meat sauce and finally whipped the Cream of Mushroom sauce that would go on top. I made a big batch of Baked Mac meant to be shared with my brothers too.
