Crispy bacon, sauted veggies, and cheddar cheese are all combined in this delicious Easy Breakfast Bacon Pie, which is baked in a light pie crust. It's easy to make and ideal for a filling brunch or breakfast.
Ingredients: 1 refrigerated pie crust. 6 slices of bacon, cooked and crumbled. 1 cup shredded cheddar cheese. 1/2 cup diced onion. 1/2 cup diced red bell pepper. 4 large eggs. 1 cup milk. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika.
Instructions: Preheat your oven to 375F 190C. Place the refrigerated pie crust in a 9-inch pie dish and crimp the edges as desired. In a skillet, cook the bacon until crispy. Remove and drain on paper towels. Crumble the bacon once it's cool. In the same skillet, saut the diced onion and red bell pepper until they become tender, about 5 minutes. Remove from heat and let them cool slightly. In a bowl, whisk together the eggs, milk, salt, black pepper, and paprika. Spread the crumbled bacon, sauted onion, and red bell pepper evenly over the bottom of the pie crust. Sprinkle the shredded cheddar cheese on top of the bacon and vegetable mixture. Pour the egg mixture over the bacon, cheese, and vegetables in the pie crust. Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown. Allow the bacon pie to cool for a few minutes before slicing and serving. Enjoy your delicious and easy breakfast bacon pie!
