A creamy and indulgent banana pudding without the guilt! Avocado adds richness and creaminess while keeping the carb count low. It's a delicious keto-friendly dessert that satisfies your cravings.
Ingredients: 2 ripe avocados. 1/4 cup coconut milk. 1/4 cup unsweetened almond milk. 2 tablespoons lemon juice. 1 teaspoon vanilla extract. 1/4 cup powdered erythritol. 1/4 teaspoon ground cinnamon. Pinch of salt. 2 medium bananas sliced. Sugar-free vanilla wafers optional topping. Whipped cream optional topping.
Instructions: You can use a food processor to make the mixture smooth and creamy. Add the lemon juice, vanilla extract, erythritol, cinnamon, and salt. Place sliced bananas and the avocado mixture in serving cups or a glass dish one on top of the other. Put another layer of ingredients on top of the last one until all of the ingredients are used up. Put it in the fridge for at least an hour to let the flavors mix. If you want, you can serve it cold with sugar-free vanilla wafers and whipped cream on top.
