Ingredients: 2 cups brown rice flour. 1/2 cup coconut oil, melted. 1/2 cup maple syrup. 1/4 cup almond milk. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup vegan chocolate chips.
Instructions: Preheat oven to 350F 175C. In a large bowl, mix together brown rice flour, melted coconut oil, maple syrup, almond milk, vanilla extract, baking soda, and salt until well combined. Fold in vegan chocolate chips until evenly distributed throughout the dough. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them apart. Flatten each dough ball slightly with the back of a spoon. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
