Ingredients: 1 cup peanut butter. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup chocolate chips ensure gluten-free.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt until well mixed. Fold in the chocolate chips. Using a spoon or cookie scoop, drop dough onto the prepared baking sheet, spacing them apart. Flatten each cookie slightly with a fork, creating a crisscross pattern. Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
