Enjoy all the flavors of a bacon cheeseburger in a comforting, dairy-free soup! This Paleo Bacon Cheeseburger Soup is AIP and Whole30 compliant, packed with nutritious ingredients like sweet potatoes, carrots, and celery.
Ingredients: 1 lb ground beef. 6 slices bacon, chopped. 1 onion, diced. 3 cloves garlic, minced. 4 cups beef broth. 1 can 14 oz coconut milk. 2 cups diced sweet potatoes. 1 cup diced carrots. 1 cup diced celery. 1 tbsp apple cider vinegar. 1 tbsp coconut aminos. 1 tsp dried oregano. 1 tsp dried basil. Salt and pepper to taste. Optional toppings: diced avocado, chopped green onions, coconut yogurt for dairy-free 'sour cream'.
Instructions: Cook the bacon until it's crispy in a big pot. Take it out of the pot and set it aside. Leave the bacon grease in the pot. Put the ground beef in the pot with the bacon grease. Break it up into crumbles as it cooks so that it gets brown. Put the garlic and onion that have been diced into the pot. Keep cooking until the onion is clear. Cut up the sweet potatoes, carrots, and celery and add them to the bowl. Add the coconut milk and beef broth. Coconut aminos, dried oregano, and dried basil should be added. Add pepper and salt to taste. Turn down the heat and let the soup cook for twenty to twenty-five minutes, or until the vegetables are soft. Serve the soup hot with crispy bacon and any other toppings you want.
