Have fun with these cute Chocolate Almond Acorn Cupcakes this fall. Not only do they taste good, but the acorn decoration makes them look nice too. Great for fall parties and people who love desserts!
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup cocoa powder. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup buttermilk. 1/2 cup hot water. 1/2 cup chopped almonds. 1/2 cup chocolate chips. 24 mini pretzel sticks. 24 chocolate kisses. 1/4 cup chocolate frosting.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Add the dry ingredients to the wet ingredients in three parts, alternating with the buttermilk, beginning and ending with the dry mixture. Mix until just combined. Pour in the hot water and mix until the batter is smooth. Fold in the chopped almonds and chocolate chips. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack. Once the cupcakes are cool, frost the tops with chocolate frosting. To create the acorn decoration, gently press a mini pretzel stick into the center of each cupcake, followed by a chocolate kiss on top of the pretzel stick. Your Chocolate Almond Acorn Cupcakes are ready to enjoy!
