Sneak peak at one of today 's healthy meals: Tofu, cashew stirfry with frozen veg, garlic, ginger, soy & plum sauce! Yum! Nut. Info: Cal. 348, protein 20g, Fat 14g, Fibre 8, vit A 105%, vit. C 120%, calcium 16%, iron 27% Recipe (makes 2 servings) 1/2 brick firm tofu 1 bag compliments Asian frozen veg 17 cashews 2 tbsp plum sauce 2 tbsp chili soy dipping sauce 1 garlic clove Grated fresh ginger to taste Drain tofu & cut into small pieces. Spray pan with olive oil spray. Sautee veggies & add sauces & seasonings. Cook for 5 min. Add tofu. Cook for 10 min or until reaches desired consistency.
Pregnancy, vacation and a death in the family proved to be too much for me to handle along with trying to conquer emotional eating habits that I've had for years. Anyway, I am happy to say I am back on track as of today! I completed one day in its entirety without falter!!! Will be posting again starting tomorrow and resuming my 100 Day Shift!!! When at first you don't suceed , try again!!! I am happy to report that the 10 days I spent building the habit of drinking 2L + of water & taking my multi-vitamins, have turned into a long-term habit!!!!! It's all about progress, not perfection!
