The stalk of green onions that Farfetch'd holds is used as a weapon, much like how a samuri would use one, and you can sometimes spot Farfetch'd fighting over stalks of green onions as some are better than others, according to the Pokemon.

It has been noted that there are several distinct styles of stalk fighting that Farfetch'd use.

It has become less common to see Farfetch'd so it is thought they their numbers are decreasing, and to combat this more people have made an effort to breed Farfetch'd.

If anyone tries to disturb the reed filled area where Farfetch'd onion stalks grow, Farfetch'd will attack the intruder with its own onion stalk.
