Egglicious! Eggtastic! Eggmazing! Part One
Eggs. Eggs. Eggs. Love. ❤️ So, we have chickens, ducks, 3 geese, and soon we’ll have more quail. Clearly, we like eggs. :)
I've yet to experiment with goose eggs, our geese are still young, but I’ve used the aforementioned in all sorts of sweet and savory dishes over the years. Last year, I also had a regular supply of partridge eggs (fabulous in scones!), but they are so tough to find. Sadly, partridge don’t really fit into our little homesteading project.😞
So, how ‘bout them other eggs?
For the record, farm-fresh chicken eggs are really nothing like their store-bought counterparts. No joke. I know you’ve heard this before. Some wacky chicken lady, prepper, or homesteader, amiright? *crickets cricketing* - - By the by, to me, crickets don’t chirp. They cricket. Moving right along. ;)
Backyard chickens. So worth the effort. If you can best the predators (not as easy as one would think), and you have the space/zoning, 3 or 4 (or 7) hens are great! They take care of insects and offer loads of entertainment.
And eggs! The nutritional value, flavour, and texture of free-range chicken eggs make up for the predation challenges…mostly. I’ll be honest. Seeing your sweet little dinos attacked will leave scars. Cannot unsee that shit. But you will do a better job protecting your flock the next time. Promise.
Be sure to get an overzealous rooster. I used to want cute and friendly. Now, I want a roo that is devoted to protecting his flock. Our rooster, Genghis, is one seriously committed guardian. Fearless. I like him. As for the eggs, the flavour difference really surprised me. So yeah, chickens.
Ducks! Once you add water fowl, it’s a whole other project. They are messier. But they are great foragers and help with all the darn bugs.
Most people who keep a few ducks will tout the benefits of ducks over chickens. Ducks are really reliable layers. Chickens can sometimes be freeloading slackers. Truth. Ducks will produce fairly regularly, even in winter. Chickens, not so much. (Pssst, chickens are also more sensitive and don’t recover as quickly from outside stressors.)
But how do they taste? Duck eggs are richer in flavour and have a higher fat content. On the downside, duck eggs can get a little rubbery when fried, but are really fabulous for baking. They make a moist cake, but I really recommend weighing the eggs for a recipe or the texture just isn’t right. Chicken eggs (as called for in most recipes) are approximately 55g. Weigh out the equivalent in duck eggs and you're good to go. Oh, and let me just say that I have made the best meringue ever, using duck eggs. The. Very. Bestest. :)
