The bright flavors of cilantro pesto are mixed with the sweetness of fresh corn and cherry tomatoes to make this cool pasta salad. This dish is great for summer parties or as a light dinner.
Ingredients: 1 lb pasta of your choice. 1 cup fresh cilantro leaves. 1/4 cup roasted almonds. 2 cloves garlic. 1/4 cup grated Parmesan cheese. 1/4 cup olive oil. Salt and pepper to taste. 2 ears of fresh corn, kernels removed. 1 cup cherry tomatoes, halved.
Instructions: Cook pasta according to package instructions. Drain and set aside. In a food processor, combine cilantro, roasted almonds, garlic, Parmesan cheese, and olive oil. Blend until smooth. Season the pesto with salt and pepper to taste. In a large mixing bowl, toss the cooked pasta with the cilantro pesto until evenly coated. Add fresh corn kernels and cherry tomatoes to the pasta mixture and gently toss to combine. Serve immediately or refrigerate until ready to serve.
