(I’m just gonna totally leave the name of this cheese alone, because the jokes really write themselves)

I’m pretty proud of myself for coincidentally matching my outfit to today’s cheese. It was unexpected, because this isn’t exactly a common colour for cheese.

In fact, there’s not a lot that’s very common about this Norwegian cheese, also known as brunost (brown cheese). In fact, depending on who you ask, it’s not actually a cheese. Instead of being made primarily of milk proteins, it’s made of the whey, what’s left over when the curds are strained out of curdled milk. The whey is boiled, which caramelizes the milk sugars, giving the brown colour.

It also gives a really sweet, toffee-like flavour. Seriously, if someone gave this to me in a Werther’s wrapper, I don’t think I’d guess that it’s a cheese. Or ‘cheese-like dairy product’ anyway.

So maybe it doesn’t totally belong on this blog. But it’s wacky and unique, and you should try it.

I may have claimed that spring was here a couple weeks ago when I reviewed Mt. Mansfield’s Inspiration, but now spring is really here. It is downright HOT out. As soon as I got home I opened the window so I could feel that warm wind in my, er, hair…

So it’s appropriate that today’s cheese is called Prairie Breeze. This cheese from Iowa may make you expect light, fresh tastes, but it’s really much more on the meatier end. It’s a sweet cheddar with some serious nutty, smokey flavours. It’s dry, crumbly, and seriously nice.
