Fresh Summer Quinoa SaladΒ
Ingredients:
- 2 cups quinoaΒ
- 1/2 cups cut up sun-dried tomatoes
- 1/2 cups roasted red peppers
- 1/2 cups bell pepper
- 1 cup chickpeas
- 1/2 cups cucumberΒ
- 1 handful of capersΒ
- 1/2 cups onion
- White wine vinegar
- 1 - 2 lemons
- Olive oilΒ
Prep time: 45 minsΒ
Directions: Chop up onion and marinate in white wine vinegar (or any other type of vinegar you have lying around) for no less than half an hourΒ
For the dressing, mix 3 parts lemon juice and one part olive oil (or really however tastes good to you)Β
Add all other ingredients together, diced to your liking, adding any other garden-fresh veggies that you have lying around (the crunchier the better). This will keep, refrigerated, for a week or more and completely retain itβs fresh taste. This might just be my favorite dish of the summer - the better you eat, the better you feel!Β
