Ingredients: 4 white fish fillets such as cod or haddock. 1 cup cornmeal. 1/2 cup all-purpose flour. 1 teaspoon Old Bay seasoning. Salt and pepper to taste. 1 egg. 1/2 cup buttermilk. 4 hamburger buns. Lettuce leaves. Sliced tomatoes. Sliced red onion. Pickles. Vegetable oil for frying.
Instructions: In a shallow bowl, combine the cornmeal, all-purpose flour, Old Bay seasoning, salt, and pepper. In another bowl, whisk together the egg and buttermilk. Dip each fish fillet into the egg mixture, allowing any excess to drip off, then coat it with the cornmeal mixture, pressing the mixture onto the fish to adhere. Heat vegetable oil in a large skillet over medium-high heat. Fry the fish fillets for about 3-4 minutes per side or until they are golden brown and cooked through. Drain on paper towels. Toast the hamburger buns in the skillet until lightly browned. Spread Old Bay Tartar Sauce on the bottom half of each bun. Place a lettuce leaf, a slice of tomato, a fish fillet, sliced red onion, and pickles on top of the tartar sauce. Top with the other half of the bun and serve hot.
