Ingredients:
Olive or coconut oil
200g kumara, peeled and diced to 1cm pieces
120g green beans, trimmed, halved
½ cup frozen peas or sweet corn
1 medium red onion, chopped
1 medium zucchini, sliced thinly
1 medium tomato, chopped
2 tablespoons fresh parsley finely chopped
½ cup milk (or rice/coconut/almond/oat milk)
4 eggs, lightly whisked
