I root for Finland at internationals by default. After that it just goes by my favourite players. If Australia ever makes it to the main competition at any international hockey event, I hope everyone else explodes !

75g dark chocolate chips/chopped bar chocolate (or whatever u prefer)
50g cocoa
125g flour
2 (two) teaspoons salt
1 teaspoon vanilla extract
OPTIONAL: whatever other inclusions u like. for this i used 75g chopped walnuts and 120g caramel chips. peanut butter or white choc chips are also fun!!
3 large eggs (room temp. put them in a bowl of hot water for 5-10 mins)
oven at 180/350 whatever units. line your tray with paper. scrunch it and unscrunch it so it holds its shape. i dont fuck around with cutting or folding my baking paper for brownies!! standard 9x9 is good, i used a roasting tray which is a bit longer <3
melt the sugar and butter together. if using microwave cube the butter so it melts more evenly. keep mixing and heating even after butter is fully liquid to dissolve some of the sugar. sugar doesnt need to be fully dissolved, half done is perfect.
if using stovetop, you can go as long as you want (long as its not burning) tbh (brown butter brownies go hard!!!!)
add cocoa, flour, salt, vanilla to butter/sugar mix, then add eggs and mix until combined.
pour batter and spread evenly. add choc chips, poke them into the batter if they dont sink. add other inclusions and poke those in too!
bake for 25-35 mins on the middle rack. ymmv based on oven, tray dimensions and material. check at 25 min mark for doneness, keep cooking until its done how you like. i stop at roughly 28 because my oven is sillayy :)
hot tray will keep cooking your brownies if you keep them in there!! personally i rest them until just cool enough to lift out of the tray without falling apart
