Healthy protein pancakes these are blueberry lemon flavor but you can change it up. Made in a blender with a ripe banana, 3 eggs, 1 cup oats, a pinch of salt, 2 tsps of baking powder , 2 TBSP of protein powder (I used vanilla) and a squeeze of lemon juice. Blend until smooth and pour by 1/3 cup into a greased nonstick pan on low medium heat. After I pour my batter i add the blueberries. Cook 2-3 mins per side makes 6. Top with a dallop of greek yogurt.
