Hylian ears are naturally very emotive HOWEVER, it is seen as improper for them to be. As a result, it is tradition for hylian children to be trained to have more static ears. This cannot be reveresed when they adulthood. Because of the whole thing that hylians 'were given long ears to hear the word of the gods', they want to have their ears pointing upwards so they can hear.

Examples of Hylians that would have more emotive ears would be :

Hylians in Rauru and Sonia's hyrule (re-establishment of hyrule without much knowledge of history)

Hylians of the Great Sea ( forgotton history)

Hylians post-calamity (downfall of society, why the hell would they care? Not as expressive as other examples but still)

Hero of Time ,Hero of Twilight (not the whole eras, them in particular cause they werent raised by Hylians) & Hero of Wilds (less emotive than other examples cause of previous training but its still there cause. Yknow. Amnesia.)
