Great question. I always recommend reading the beginner articles by saint11. It will teach all pixel art basics. In terms of finding what to draw, I know its easy to say but focus on what you find fun. Start with something small, like an apple, a sword, a potion. Look at other people's sprites and find something "wow I like that I probably could copy it" (for a study). Its fine to copy and learn just remember to credit if you post it.

Or use multiple references and create something of your own from them. Maybe you like the shapes of one reference, color of another, details of the third. Thats how we learn and create.
