There is a creamy and tasty Indian kebab dish called Chicken Reshmi Kebab. The kebabs are tender and tasty because the chicken is marinated in a rich, silky sauce made with yogurt, cashew nuts, and spices. Great for a barbecue or as an appetizer at a party.
Ingredients: 500g boneless chicken. 1/2 cup yogurt. 1/4 cup cashew nuts. 1/4 cup fresh cream. 2 tablespoons ginger-garlic paste. 1 tablespoon green chili paste. 1 tablespoon garam masala. 1 tablespoon lemon juice. Salt to taste. Wooden skewers pre-soaked in water.
Instructions: In a blender, combine cashew nuts, yogurt, fresh cream, ginger-garlic paste, green chili paste, garam masala, lemon juice, and salt. Blend into a smooth paste. Cut chicken into bite-sized pieces and marinate in the prepared mixture for at least 2 hours or overnight in the refrigerator. Thread marinated chicken onto wooden skewers. Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers, turning occasionally, for about 15-20 minutes or until they are cooked through and have a nice char. Serve hot with your favorite chutney or dip.
