From what we see of Will’s fantasies and can intuit of Hannibal’s from his conversations with Will and attitudes about certain traits and actions of his, they both have very visceral and surreal fantasies in regards to each other, and there’s always something that implies a desire for interconnection involved. They’re the only “true” cannibals of the series because they both knew what they were eating, actively cultivated and pursued that diet and found a form of power in it, developed a personal mindset around that. Pathological cannibalism is notorious for bleeding over into the realms of intimacy and sexuality in the psyche, in terms of real criminal psychology, so finding connection and eroticism in cannibalizing together during later charged dinners, a sense of intimacy pervading Hannibal’s attempt to eat Will’s brain despite its purpose being the termination of that between them and Will presumably being the one to go after Bedelia to fulfill his earlier promise of eating her to eliminate a sexual rival and someone who knew Hannibal intimately make sense. No matter how detached and special Hannibal frames himself as or how much Will tries to reframe enjoyment of violence and desecration as enjoyment of “justice”, they’re both clearly susceptible to this. It makes total sense that they’d end up treading the line of reasonable safety with these mindsets and murderous preferences and fantasies being exsanguinated in their sexual relationship with each other, giving head with teeth or otherwise
