April Fool Moon
A wonderful start to spring began with a full moon ritual accomanied by mom and nephew. We chanted to the moon while the little one danced, followed my yelling our gratitude to the moons light, guidance, and love. Made my first batch of moon water and ended today with sunny outdoor exploration.

Comfort Soup
Ingredients:
Shallot, garlic, 2 small carrots, 1 medium russet potato, new pepper, tumeric, parsley, thyme, celery salt, sea salt, avocado oil, chicken broth, heavy whipping cream
Peel potato and carrot. Then, cut into pieces, the smaller the faster it will cook.
Add sliced carrot to a sauce pan with avocado oil on low-medium heat for about 3-5 minutes.
Then, add the sliced potatoes and cover with chicken broth. Bring to boil
Add 1-2 cloves of garlic
Quarter your shallot and add to the pot
Generously season with salt , parsley, thyme, and pepper. Lightly season with celery salt, tumeric.
It will take about 30 minutes for all of the vegetables to be cooked down. At this point add the contents of the pot to a blender safe container. Add enough heavy whipping cream to be able to blend.

Just finished "This is your brain on food" by Uma Naidoo. Absolutely love her explanation of the gut-brain connection. I've read other nutrition books in the past but this one really hit home. Naidoo seamlessly incorporates mental health into the conversation of nutrition and how we fuel our bodies. Very inspirational for my eating disorder recovery.

today has been my day of preparation. meal prepping, planning my intention, all so tomorrow my mind can be clear while i read at the botanical garden before the new moon.
there's a few reflections in my book over the four foundations of mindfulness i believe i will understand more while surrounded by the elements. the botanical garden is the closest i can get since its winter in the midwest.
