So this is what became of my eggplant... sliced it, egged it, tossed it in some almond flour and parmesan and fried it up. Then I chopped up some left over Turkey meatballs and cooked it all quesadilla style w some sauce and mozz. Sooo good!! I have to say I feel like I'm in full garden failure.My backyard is just a hot mess of weeds, herbs and every insect imaginable. Happens this time every year.
