Happy Chanukah Guys. . Ingredients: 2lbs Russet Potatoes 1 medium onion 2 TSP Kosher Salt 1/2 cup matzo meal 4 large eggs Recipe: 1.) Skin potatoes then roughly with either food processor or box grater, then grate onion as well. 2.) Then take grated contents and place them into cheese cloth, squeeze all liquid into large mixing bowl, make sure to get as much liquid out of the grated potatoes and onions as possible.( This will aid in crispyness). 4.) Next preheat frying pan with a good high heat frying oil on medium-high heat. (I used grape seed with two table spoons of ghee for extra flavor) 5.) Pour liquid from your mixing bowl into sink, however make sure you leave the white starch that is left behind in the bowel. ( this white starch is another secret to crispy latkes) 6.) In your mixing bowel drop in your shredded potatoes and onions. Mix in with your hands salt, matzo meal, and eggs. Make sure all ingredients are fully incorporated. 7.) Making sure you give them plenty of space, spoon mixture into frying pan. Flip when edged start to become golden. 8. Lastly place fried latkes on paper towel lined plate to allow excess oil to pass.
