In the real world, eating a person is, health wise, roughly the same at eating any other animal if prepared correctly. The exception is the brain. Even cooked, there’s a chance of Kuru, a disease similar to mad cow disease, from human brain tissue. Eaten raw, there’s also any diseases from raw meat, although I can’t say if any are fatal.

If Hannibal did eat Will’s brain, there is a possibility he dies from a slow, painful disease. It would wither away his body mentally and physically, there’s tremors, muscle jerks, mood changes, dementia. It’s rare, but it’s very possible. And Hannibal, as both a doctor and cannibal, should know this.

Do you think, when deciding what part of him to eat, Hannibal was so focused on the ~symbolism~ of eating Will’s brain, he didn’t think about the consequences, impulsive to a fault? Too focused on the epic culmination of betrayals and emotions that he disregarded his health for his message.

Earlier in the season we saw that Hannibal took off his shoes to silently sneak up on Miriam and over power her. He had the exact same opportunity with Will but he let Will turn around (while holding a gun) to face him.

They both knew that neither one was a real threat. The fact that Will tipped off Hannibal and thus saved his life was confirmation to Hannibal that Will wanted to go with him but a small part of him still held back.

Then in season 3, Jack tells Will to cut out the part that wanted to leave with Hannibal. What really happened was Hannibal cut out (literally and figuratively) the part of Will that kept him from escaping together. Jack doesn’t realize that the love that Will had for Hannibal after recovered from the gutting superseded any desire to capture him for the FBI.

I also think it's a moment when he is again facing how vulnerable he is in front of Will and it's also the fact that Will chose to reveal this piece of information now . He cares about the fact that Hannibal should know that those lines were just a trick and not how he really feels about him. All the "You delight, I tolerate" and the "I don't want to think about you" and the "I'm not going to find you" were all Will's bullshiting because he was sure Hannibal would fold.

But now it's important for him to explain his reasoning behind saying all that bullcrap "You'd only do that(surrender) if I rejected you" basically "I had to say all those things, it was the only way to make you surrender" and I am so sure that both of them cried after this scene.
