Another recipe! This is a feta pasta, vaguely inspired by the once viral feta pasta bake. But doctored to my own taste.
Feta, tomato, onions, peppers, mushrooms and garlic cloves all go into a big oven safe dish with 5 millimetres of water, and a decent swish of oil. Throw in whatever herbs you like, I used thyme and basil. Cover in tin foil and throw into your oven at 150°C for half an hour or so.
Take that tin foil away, set it to the side to hold dirty spoons or whatever.
Get a potato masher.
Mash the dishâs contents, bonus points if you imagine your exâs face.
Once sufficiently smushed, throw that bad boy back in the oven for another half an hour or so, while you cook some pasta.
I do not need to tell you how to make pasta.
When youâre satisfied, the pasta is cooked, and youâre hungry enough to eat the plate, take the dish out the oven and throw its contents into your DRAINED pasta, mix it all together and then gently spoon into whatever you prefer to eat off of. I used a bowl, you could use a plate, mug, particularly nice neighbour, or just eat it straight from the pot i canât tell you what to do.
Sprinkle over some herbs, and Parmesan.
