Quick Method 1. Sauté: Heat oil, cook onions, peppers, garlic (and ginger) after they have been pureed 2. Build the Base: Stir in blended tomatoes, tomato paste, bay leaves, seasonings; simmer until cooked 3. Add Veggies coating them in the sauce and let the thoroughly cook. Remove the vegies and add the rice. 4. Let the rice cook on low heat (or fire) and cook, covered until cooked. 5. Finish & Serve: Remove bay leaves, fluff rice, adjust salt/seasonings, and scoop into bowls.
